Apple Fritters – little golden pancakes filled with delicious sweet apple, drizzled with butter and sprinkled with sugar….mmm, yum! I can taste them now.
This recipe brings back memories of our family sitting around the kitchen table with fritters in the middle and hands coming from each direction grabbing one after the other until there was only the sugar to clean from the plate. It’s funny how something as simple as a fritter loaded with apple can make you remember things from your childhood.
I don’t even recall what I was doing the other day when the idea of making them popped into my head, but since then, I’ve not been able to think of much else other than recreating them.
So, this morning when my dog woke me up at the crack of dawn and yes, I mean the crack of dawn, there was barely sunlight streaming through the window when I copped a paw to the face and was forced to roll out of bed and let him out to do his ‘thing’, that I considered cooking these for breakfast. Now, there’s something you should know about me; I generally don’t cook anything on a work day morning, I’ve hit snooze on the alarm that many times that by now I’m running late and just need to get a move on. However, today, for whatever reason, I could only think of hot butter running between my fingers, covered in sticky sugar with that sweet apple taste for breakfast, and to be honest, I’m soooo glad that I did. What a way to kick-start the day!
If eating apple fritters for breakfast isn’t your thing, then there are few ways in which you could serve this humble snack, one would be with icing sugar, ice-cream, fresh cream or just the way I like them, au naturel. Below is the how to recreate these at your place.

— 001 —
Add grated apple, egg, milk, sugar and flour to a large mixing bowl, stir to combine.

When the butter has melted, add 1/4 cup of batter to the pan. Cook until the edges start to bubble.

Tip: if you press lightly in the middle of the fritter, it should feel a little firm, if it’s still really soft then the middle is not cooked through.
