Baked Brie with Chorizo – this recipe came into my life a week ago when I decided that I wanted to undertake a few cooking classes to enhance my skills and well, something fun for me to do one night a week after work for a few weeks. The course is designed to provide extra tips and tricks for either the beginner, already skilled cook or practicing chef. It sounded interesting so, I signed up.
Obviously, a part of that course is cooking/baking some of the recipes that have been provided to us to practice, and well this just happened to be one of them. So, yesterday around 2.30pm, after spending the morning tearing out a spare kitchen that was in the house due to the previous owner having a duel living arrangement, and after a few trips to the dump and hardware store, Damo and I had both had enough. In order to celebrate our achievements, we decided that it was time to sit, relax and enjoy what was left of our Sunday afternoon and of course, enjoy a couple of well earned drinks.
The best thing to go with some drinks is something to eat, and this just happened to be, a baked brie with a heavy dose of Spanish influence. The Spanish influence is in the form of some very tasty Chorizo sausage and Paprika. It is a flavorsome combination, easy to prepare and hit the spot for us both as we teamed it with some home-made water crackers (which I will share in another blog post) and some crunchy bread.
Baked Brie with Chorizo
Ingredients
- 1 round Brie Cheese good quality
- 80 grams chorizo sausage
- 2 tablespoons onion
- 1 tablespoon paprika
- 1 teaspoon lemon zest
- roasted capsicum finely diced
- parsley chopped roughly
- 1 teaspoon olive oil
Instructions

Pre-heat oven to 200C/400F.

Chop the chorizo sausage into a fine mince and thinly slice the onion.

In a large frypan add a drizzle of olive oil over a high heat.

Add the chorizo sausage and fry quickly until just browning.

Add the onion and paprika and cook for a minute. Remove from heat.

Add the lemon zest and stir to combine.

Place the brie on a parchment lined baking tray and carefully spoon the chorizo mixture over the brie.

Bake for 10-12 minutes until the cheese has puffed and is oozy and melting. Remove from the oven and garnish with strips of roasted capsicum and parsley.
