Berry Porridge – I love waking up to a hearty bowl of hot porridge, even in Summer. To ‘bling’ it up I add some mixed berries, which makes this a breakfast worth leaping out of bed for….even on a workday!
Although, waking up to yet another bowl of, somewhat boring looking porridge, can feel a little like groundhog day. Hence, my desire to mix things up. It not only changes the look, but also the flavour by merely adding a few ‘extra’ ingredients.
The other benefit of porridge is that it can be made ahead of time. So I can make a batch that serves four on Sunday, store it into air-tight containers in the fridge and grab one on my way out the door to work. A quick re-heat for a 1 minute or so and you’re done!
Berry Porridge
Ingredients
- 1 1/2 cups traditional rolled oats
- 2 cups water
- 1 cup milk
- 1/2 teaspoon ground cinnamon
- Salt
- 2 cups frozen mixed berries
- 1/4 cup brown sugar
Instructions

Add the oats, milk, water, cinnamon and salt to a medium saucepan. Bring to the boil, stirring occasionally. Reduce the heat and simmer, stirring frequently for about 10 minutes or until the oats tender.

Fold through the frozen berries and continue to cook for approximately 2-3 minutes or until the fruit is defrosted but still holding shape.

Stir in the brown sugar and vanilla extract.
