Bircher Museli – also known as my version of overnight oats. I absolutely love this breakfast. Not only is it soooo quick to make, it is super healthy, super yummy and keeps me full till lunch time. Best of all, it takes very little effort on my part!
I usually make this last thing before I go to bed and leave it in the fridge overnight. When I come down in the morning, breakfast is ready to go. Simply spoon out in to your favourite bowl, add some berries, nuts and seeds, drizzle some sugar-free Maple Syrup or even honey for that extra boost to get you going or eat as is.
Bircher Museli
Ingredients
- 1 medium granny smith apple
- 1 cup rolled oats
- 1/2 cup apple juice
- 1/2 cup low fat plain yoghurt
- 1/4 teaspoon cinnamon
- 2 strawberries quartered to serve
- sprinkle sesame seeds
- sprinkle pepitas
- sprinkle flaked almonds
- drizzle sugar-free maple syrup
Instructions

Use a mandolin grater with a coarse grating plate or a standard grater to grate the whole unpeeled apple.

In a medium sized mixing bowl, add the grated Apple, Yoghurt, Apple Juice, Cinnamon and Oats.

Stir gently to combine all ingredients.

Cover the bowl with plastic wrap and place in the fridge overnight or approximately 8-9 hours.

In the morning, remove from the fridge and remove plastic wrap.

Serve in your favourite bowl, top with berries, nuts, seeds, sugar-free maple syrup (optional)

- Fruit, berries, nuts, seeds and sugar-free maple syrup are serving suggestions only. You can eat the Bircher Museli as is.
- I used a store bought, no sugar, made from real green apples, Apple Juice, to stay in keeping with the flavour, but you can use any type of apple juice you like.
What you’ll need:

- Medium sized mixing bowl

- Plastic wrap
- Fridge
- Knife (if you are going to cut/slice fruit)
Step by Step Instructions:
Step 1:
Grate your apple.
I have used a Granny Smith Apple for my recipe, however you can use your favourite variety. I’ve also used a Pink Lady and a Royal Gala, my preference is the Granny Smith, for no other reason that I like them more. They are a little firmer and stay nice and crunchy overnight.
Back to grating. You can use a mandolin (which I have, with a coarse grater plate) or a standard grater. Grate the whole apple with the skin on. Discard the core.
Step 2:
In a medium sized mixing bowl, add the grated Apple, Yoghurt, Apple Juice, Cinnamon and Oats.
Step 3:
Give it all a gentle stir to combine everything.
Step 4:
Cover in plastic wrap and place in the fridge overnight or approximately 8-9 hours.
Step 5:
In the morning, remove from the fridge and remove plastic wrap.
Step 6:
Grab your favourite bowl and serve.
Step 7:
Top with your favourite berries, nuts, seeds and drizzle with sugar-free Maple Syrup (optional) or simply enjoy them as they are.
I have used Strawberries, Sesame seeds, Pepitas and Flaked Almonds along with sugar-free Maple Syrup drizzled over the top. Yum!
Storage:
- Leave covered with plastic wrap or store in an air-tight container in the fridge for 3 days.
