Chicken Bruschetta – Turn an appetizer into a main meal with this delightfully easy and delectable hack.
Bruschetta or as it’s pronounced in Italy, bru’sketta, is an antipasto / starter dish consisting of grilled bread, rubbed with garlic and topped with olive oil and salt. This was a way of salvaging bread that was going stale….um….er.,..thanks Wikipedia, good to know! I’ll probably be thinking twice before I order the bread version of Bruschetta in a restaurant again!
I can assure you, that this hack, sees no stale bread in sight!
Instead, this low-carb, healthy, clean eating, high protein recipe is easy to make and uses only fresh ingredients like, gorgeous Roma tomatoes, freshly minced garlic, fresh basil leaves, red onion and freshly grated parmesan, although you could use store bought, as well as, the star of the dish, fresh Chicken.
It is a dish that and can be done quite simply in one pan, although, I prefer plating up on a serving platter, to avoid any potential mishaps.
The end result? A visually appealing meal that offers, tender, succulent chicken breast fillets, coated in Italian Herbs, Garlic and Olive Oil, cooked till brown and then smothered in the flavour-packed bruschetta topping, sprinkled with some extra Parmesan cheese and finished off with a drizzle of thick, luxurious Balsamic Glaze.
Chicken Bruschetta
Ingredients
- 2 large chicken breasts boneless & skinless
- 3 teaspoons Italian seasoning
- 2 cloves garlic crushed
- 1 tablespoon olive oil
Bruschetta Topping
- 4 Roma tomatoes finely chopped
- 1/4 red onion finely chopped
- 15 grams fresh basil leaves roughly chopped
- 2 tablespoons olive oil
- 1/2 cup Parmesan cheese finely grated
- Balsamic Glaze store bought
Instructions

Prepare the chicken breasts by cutting them in half lengthways to obtain fillets.

In a medium sized mixing bowl, add the olive oil, garlic, Italian Seasoning and a pinch of salt. Add the chicken breast fillets to the bowl, toss to coat.

Heat a large frypan or skillet over a medium to high heat. Add the olive oil. Add the seasoned chicken breast fillets and cook for 3-4 minutes on each side, or until cooked through.

In another medium sized mixing bowl, add the chopped tomatoes, red onion, basil, olive oil and Parmesan cheese. Stir to combine and set aside.

Once the chicken is cooked, remove from the heat. Using a spoon, spoon out the Bruschetta mixture on top of each of the chicken breasts. Sprinkle with some more Parmesan and then drizzle with Balsamic Glaze. Serve with a side salad and fresh bread.
