Flaming Rum ‘n’ Raisin – there is only one word that describes this dessert….HEAVENLY!
Picture this if you will: a spoon in one hand and a bowl of this Flaming Rum ‘n’ Raisin dessert in the other, curled up on the couch on a Friday night, binge-watching last years episodes of Orange is the New Black, (yes I know a bit behind in my shows), whilst slowly slurping and crunching my way through this wonderful, lightly scented, yet full bodied alcoholic dessert.

This dish is super easy, very delicious and the gorgeous ginger nut biscuit crumble adds a lovely crunch to an otherwise relatively smooth meal. The sultanas and raisins complement each other beautifully, and soak up the goodness of the spiced rum in a truly decadent way. The recipe serves four, but trust me, it’s hard not to keep this one to yourself and yes, once prepared you can actually fix yourself another bowl during the ad break! Truth be told!
Flaming Rum n Raising Dessert
- 4 large scoops vanilla ice-cream
- 60 grams sultanas
- 60 grams raisins
- 6 ginger nut biscuits
- 100 ml spiced rum
In a medium sized saucepan, add sultanas, raisins and a splash of water and place on a medium heat. Cook for a couple of minutes or until the water is dissolved and the raisins and sultanas have 'plumped' up.
Once the water has dissolved, remove from the heat and add the spiced rum. Grab a lighter, and flambé ithe fruit.
Remove ice-cream from the freezer to allow it to soften a little.
Crush the gingernut biscuits into a crumb.
To plate, sprinkle the ginger nut crumb on the bottom, place a scoop of ice-cream on top, add the fruit mix around the sides with any leftover liquid. Serve.
