Pasta Stir Through with Bacon – simple, quick, tasty and ready in under 15 minutes.
These were the words that were running through my mind last Friday after I’d spent the afternoon standing around and making small talk at our work Christmas party. I had made every intention of only staying a couple of hours, but when I did leave it was late afternoon/early evening. I really have no idea where the last 6 hours disappeared to.
Anyhow, as I walked through my door, I was definitely in no mood to cook, yet Damo was on his way over and I had promised to make dinner. Hmmpf….why do I commit myself to these things?
Not wanting to go out again to the shops, I had a look at what I had in the cupboard and fridge and managed to grab a few things out and place it on the bench. It always surprises me that I seem to be most creative when I’m feeling my laziest. I wonder why that is!
So with a few simple ingredients a new dish was born and added to my repertoire. Now, I’m all for making things from scratch, but hey, let’s face it….it’s not always feasible and sometimes you just down-right, don’t want to. The sauce is really what brings the recipe it’s flavour as its quiet intense, yet works well with the other ingredients. I’ve not added any additional seasoning, however, if you want to, please feel free. I personally found that the addition of the bacon was enough saltiness for my liking. Hope you enjoy!

Pasta Stir Through with Bacon
Ingredients
- 350 grams spiral pasta
- 1 teaspoon oil
- 1 medium brown onion chopped
- 6 slices streaky bacon rashers chopped
- 3 cloves garlic chopped
- 350 gram jar Leggo's Sundried Tomato and Roasted Garlic Stir Through Pasta Sauce
- 1/2 cup mozzarella cheese grated
- parmesan and parsley to garnish optional
Instructions

Prepare pasta as per packet instructions

Add oil to a large frypan over a medium to high heat

Add onions and stir occasionally until soft

Add bacon and continue to stir occasionally until lightly browned

Add garlic and continue to cook for a minute. Remove from heat.

Add the cooked and drained pasta, mozzarella cheese and stir through pasta sauce to the frypan

Using a spatula or tongs, stir all ingredients until combined.

Serve and garnish with parmesan and parsley
How to make Pasta Stir Through with Bacon at your house:

Prepare the pasta as per packet instructions.

Over a medium – high heat add oil to a large frypan.

Add onions and stir occasionally until soft.

Add bacon and continue to stir occasionally until lightly browned.

Add garlic and continue to cook for a minute. Remove from heat.

Add the cooked and drained pasta, mozzeralla cheese and stir through pasta sauce to your frypan.

Using either a spatula or tongs, stir until all ingredients are combined.
Serving Suggestion:
Garnish with grated parmesan cheese, parsley and serve with warm crusty bread.
Storage:
- Store in an air-tight container in the fridge for 2-3 days
- Store in an air-tight container and freeze for up to 2 months
