Pizza Scrolls – I’m slowly coming around to the idea of assisting, or at least sharing the responsibility of preparing the kids lunches in the morning and, to be honest, it’s taking a bit longer than I expected. In the past when I’ve stayed the odd night during the school week, I’m generally the first to depart the house in the morning, this is for two reasons;
- firstly, I work further away and the traffic can be disastrous; and,
- secondly, I tend to find the whole thing a little stressful.
I mean you’ve got kids trying to get ready, clothes coming out of the dryer, odd socks or last minute swim kits to find or get organised, all whilst trying to arrange a lunch and a breakfast and get them and you out the door!
I seriously do take my hat off to mum’s all over the world. Obviously throughout the infant stages you are honing your morning rituals and have this process down pat. So far, I’m in survival mode, but starting to get the hang of it. Obviously one major aspect to this is, organisation! So, I figured I would get my meal planning hat on and prepare a menu so to speak on the weekend.
Meal planning is great and I can see the benefits of budgeting and the ability for it to be a time saver, but, we had planned to have home-made Pizza one night for dinner, which the kids love to take the leftover’s for school lunch the following day, however for whatever reason, the Pizza didn’t eventuate and we had something else instead, which left me and my menu plan in disarray.
So, before I went into melt-down and reaching for the bread and Vegemite, I managed to pick up a store-bought ready-made dough ball during my lunch break. That night when I got home, I made up some Pizza Scrolls which tasted great, and using pre-prepared items, meant that I wasn’t waiting hours for the dough to rise and the whole process was done relatively quickly and whilst we had all the other ingredients at home the dough ball came in at less than cost of tuckshop and my menu plan and I were back on track! Phew!
Pizza Scrolls
Ingredients
- 250 grams Pizza Dough Ball store bought
- 3 tablespoons pizza sauce store bought per each piece of dough
- 3/4 cup cheese blend per piece of dough
- 80 grams shaved ham
Instructions

Follow the dough packet instructions to prepare the dough.

Preheat the oven to 220C / 430F and line a baking tray with grease-proof paper.

Turn the dough out on to a floured surface and knead with your hands a couple of times. Lightly dust a rolling pin with flour and start to roll the dough out. If the dough is tough to manage, cut into two smaller pieces.

Roll out one of the sections of the dough into a rectangular shape till it's about 5mm thick.

Using the back of a spoon, spread the pizza sauce evenly over the dough and add your favourite toppings. Sprinkle with cheese.

Roll the dough from the short side, until you have reached a sausage shape.

Using a sharp knife trim the ends of the roll if required.

Cut the dough with a sharp knife into 2-3cm rounds and place on to the baking tray.

Bake for 15-18 minutes or until golden.

Remove from the heat and allow to cool completely.

Serve, freeze or refrigerate.
