Prosciutto Wrapped Chicken & Vegetable Couscous Salad – now doesn’t that sound just divine? I think anything wrapped in prosciutto just takes it up a notch, but then when you add the mellow flavours of Dijon mustard to the mix…mmm, wow! This is one of those dishes that takes a plain ole jane piece of chicken and makes it into a tantalizing, glamourous and satiating meal to remember.
I have said before in previous posts that I love cooking with chicken tenderloins, they are bite sized, tasty and easily portion controlled pieces of meat that are versatile enough to be served as a snack, or at parties or made into something more, and the variety is endless.
It’s been so hot here in Brisbane this weekend, that neither Damo or myself were into preparing a big meal that was going to take ardous amounts of time cooking or to be completely honest, much effort on our part. But just because it’s hot and we are both lack lusture, doesn’t mean that we should skimp and eat unhealthily.
So, after a bit of conversation over the table at lunch, you know the one, where you both look at each other and ask; ‘What do you want for dinner?” The one where you both comeback with the same answer…I don’t know or better still, I don’t care then you again look at each other with that look as your rolling your eyes, thinking geez that was helpful! Anyhow, after a few rounds of these, I came up with chicken, he came up with prosciutto so we combined them together and added a tasty easy to prepare vegetable couscous salad to the mix.
Now, if you’ve never cooked with couscous, then you are in for a treat! The pearl couscous offers a different texture to the traditional fine grained couscous, yet it’s still super easy to prepare. Both varieties of couscous are relatively bland in taste and that’s what makes them fantastic. You can really create different things with them and give them different flavours to assist in complementing a meal. Best of all, this is a meal that can be on the table in 30 minutes, perfect for when you are in a rush or just too hot and bothered to be bothered!
