Sweet Potato Noodles with Sage Butter Sauce was inspired whilst doing some shopping at one of the supermarkets here in Australia, called, Coles. In their fresh produce section, I stumbled upon these pre-packaged 100% nothing else but sweet potato, already spiralised and ready for the microwave. Perfect for those, like me, who don’t own a spiralizer.
This seriously fast, healthy, clean eating, meat-free recipe is super easy to make and is ready in less than 15 minutes. Making it the perfect go-to meal for when you are running late or just looking for something quick, easy and light to eat.
What can you expect? Oodles of gorgeously orange sweet potato noodles coated in a buttery sauce with wafts of sage and a hint of garlic, makes this one sweet potato noodle recipe worth keeping close by.
Sweet Potato Noodles with Sage Butter Sauce
Ingredients
- 1 packet sweet potato noodles supermarket purchased
- 2 tablespoons unsalted butter
- 5-6 leaves fresh sage
- 1 clove garlic smashed
- 1 tablespoon '00' flour
- 1 tablespoon whipping cream
- 2 tablespoons water
Instructions

Prepare the sweet potato noodles as per the packet instructions.

Heat a large frypan over a low to medium heat, melt the butter. Add the garlic and sage leaves and continue to cook, stirring occasionally for 2 minutes or until fragrant.

Remove the pan from the heat and remove the garlic. Add the cream, flour and water and stir until combined.

Once combined, return the pan to the heat and add the microwaved sweet potato.

Gently toss the noodles through the sauce until coated and warmed through.
