Ingredients

  • 1 cup plain flour
  • 1/2 cup self-raising flour
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 125 grams unsalted butter melted
  • 2 eggs whisked
  • 4 over-ripe lady finger bananas

Instructions

  1. Preheat your oven to 180C / 360F and grease a loaf tin. The measurements of mine are: 21.5cm length (from inside ends) x 11cm wide x 5.5cm deep.
  2. In a large mixing bowl, sift the plain flour and the self-raising flour. Add the sugar and cinnamon. Stir to combine.
  3. Whisk the butter and eggs together and add to the dry ingredients (in step 1).
  4. Add your peeled bananas to a bowl and using the back of a fork, mash until smooth and the mix resembles something of baby food. Then add to the large mixing bowl. Stir well to ensure that everything is combined.
  5. Pour into your greased loaf pan and bake for 45-55 minutes or until a skewer inserted into the centre (in a few different places) comes out clean.
  6. Once baked, remove from the oven and leave in the pan for 10 minutes before turning out on to a wire rack. Serve warm with butter.
