No Bake Lemon Pie

  • 1 x 150 gram butter shortcrust flan case store-bought
  • 1 x 395 can sweetened condensed milk
  • 3/4 cup fresh squeezed lemon juice


  1. In a large mixing bowl add the can of sweetened condensed milk.
  2. Using an electric mixer, beat the sweetened condensed milk for 30 - 45 seconds to loosen.
  3. Add half of the lemon juice to the sweetened condensed milk. Beat until combined.
  4. Add the remaining lemon juice and beat for 5 minutes, stopping occasionally to scrape down the sides.
  5. Pour the mixture into a prepared flan case.
  6. Refrigerate for 2- 3 hours or until set.
  7. Garnish with lemon zest and fresh cream - optional.

Recipe Notes

  1. Lemons - if you don't want to squeeze fresh lemons and prefer to use the reconstituted lemon juice you can, it will still set, however the flavour won't be as intense.
